Our Southern Creole spin on a Latina staple. I mean really, Southerners and Puerto Ricans in particular share a love of A) Fat and B) Seasoned Fat that is DEEP FRIED! So here is our LA spin (Lower Alabama that is!) on the fried meat pies called Pastelillos or Empanadas, or just plain GOOD!
My Bishop’s wife (who is Puerto Rican) shared her recipe for Beef Empanadas with me (thanks Mom!) Seasoned Ground Beef cooked with love, sofrito, potatoes and olives – LOTS of olives! I love it and I think you will too!
